Ingredients

  • 1 can black-eyed peas
  • 4 slices bacon
  • 1 onion
  • 1 pouch instant rice
  • Seasoned salt or Mrs. Dash

Instructions

  1. Cook the bacon until crispy, then remove and crumble, leaving the drippings in the pan.
  2. Add chopped onion to the bacon drippings and sauté until translucent.
  3. Stir in canned black-eyed peas and cook for a few minutes to heat through.
  4. Prepare instant rice according to package instructions.
  5. Mix the cooked rice into the pea and onion mixture.
  6. Season with seasoned salt or Mrs. Dash to taste.
  7. Serve hot, garnished with crumbled bacon if desired.
