Quick Lime Torte

Ingredients

  • 3/4 cup vanilla wafer cookie crumbs
  • 3 egg yolks
  • 1/4 cup lime juice
  • 1 teaspoon grated lime peel
  • 1/2 cup sugar
  • 1 1/2 cups plain yogurt
  • 1 cup whipped cream

Instructions

  1. Lightly spray a small shallow glass dish with nonstick cooking spray.
  2. Sprinkle half the crumbs into the dish.
  3. Mix together egg yolks, lime juice, lime peel, and sugar in the top of a double boiler over boiling water.
  4. Stir occasionally until thick.
  5. Remove from heat and allow to cool.
  6. Add yogurt and whipped cream to the cooled lime mixture and mix well.
  7. Pour the mixture over the crumbs in the dish.
  8. Top with remaining crumbs.
  9. Cover and freeze until firm.
  10. Cut into squares and serve.
