Quick Microwave Pudding

- In a microwave-safe bowl, combine sugar and cornstarch.
- With a hand mixer or whip, beat in milk and egg yolks until smooth. Microwave on Medium for 5 minutes. Beat well.
- Microwave on High for 2 minutes; stir. If not thick, continue for 1 to 2 minutes. Blend in butter and vanilla.
- Cool, covered with plastic wrap directly on pudding to avoid skin on top.
- Good warm or cold. (Can also double recipe.
- Just microwave about 12 minutes, stirring every 2 minutes.)
