Quick Pulled Chicken Tacos

Ingredients

  • 2 tablespoons vegetable oil
  • 1 each onions chopped
  • 1 each garlic clove
  • 2 cups chicken cooked, shredded, pulled apart with two forks
  • 2 cups tomatoes puree
  • 4 ounces green chili peppers can
  • 1 x salt and black pepper
  • 6 each corn tortillas (6-inch)
  • 2 cups monterey jack cheese shredded
  • 1 each avocados large, thinly sliced

Instructions

  1. Saute onion and garlic until onion is translucent.
  2. Discard garlic.
  3. Add chicken, tomato puree and chilies.
  4. Season with salt and pepper.
  5. Reduce heat and simmer 10 minutes.
  6. Spoon some chicken mixture into each taco shell.
  7. Then Fill each with some cheese, avocado, lettuce, and salsa or your other favorite toppings as desired.
  8. Serve immediately.
