Ingredients

  • 1/2 cup water
  • 1 tablespoon white syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar
  • 1 egg white
  • 1/4 teaspoon salt

Instructions

  1. Mix together salt, sugar, white syrup, and water in a saucepan.
  2. Stir over heat until the sugar dissolves and the mixture comes to a slight boil.
  3. Beat the egg white until fluffy.
  4. Gradually pour the hot syrup over the beaten egg white while continuing to beat.
  5. Continue beating until the icing stands in peaks.
  6. Add vanilla and beat until well combined.
