  1. In a large bowl, mix together oat bran, whole wheat flour, white flour, raisins, baking soda, baking powder, and cinnamon.
  2. Add vanilla to a blender along with banana, egg white, honey, and acid liquid if using, then blend until smooth.
  3. Combine the wet mixture with the dry ingredients and stir until just combined.
  4. Pour the batter into muffin tins and bake at 180°C (350°F) for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
