Ingredients

  • 3 3/4 cups rice
  • 3 3/4 cups water
  • 1 package Shiofuke Konbu
  • 1/3 cup Furikake Nori
  • 1/2 cup Takuwan, diced

Instructions

  1. Cook the rice according to your preferred method.
  2. Line a 9 x 13-inch cake pan with waxed paper.
  3. Spread Shiofuke Konbu and Furikake Nori evenly on the bottom of the pan.
  4. While the rice is still hot, spread half of the cooked rice over the Konbu and Nori layer. Pack down slightly.
  5. Spread diced Takuwan over the rice layer.
  6. Cover with the remaining half of the rice and pack down so the layers stick together and hold their shape.

Tips & Substitutions

For optimal texture, use short-grain rice, as it sticks together better than long-grain varieties. If you don't have Shiofuke Konbu, you can substitute with a mix of seaweed and a touch of soy sauce for flavor. Experiment with different fillings like avocado or cucumber for added freshness. For a spicy kick, consider adding a drizzle of E. C. Mitcham'S Marinade Sauce.

Serving Suggestions

Slice the layered sushi into squares for an attractive presentation. It pairs beautifully with a side of pickled ginger and soy sauce for dipping. For a well-rounded meal, consider serving with a light salad or miso soup. This dish also makes a great addition to a bento box or picnic spread.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When ready to eat, reheat gently in the microwave covered with a damp paper towel to prevent drying out. If the rice becomes too firm, add a splash of water before reheating to restore moisture.

Frequently Asked Questions

Can I make this sushi in advance?

Yes, you can prepare the layered sushi a day ahead. Just be sure to wrap it tightly in plastic wrap and store it in the refrigerator. This allows the flavors to meld together, enhancing the taste. Slice just before serving to keep the edges fresh and appealing.

What can I use instead of Takuwan?

If you can't find Takuwan, consider using pickled radish or even thinly sliced cucumbers for a fresh crunch. You could also try using sautéed vegetables for a different texture and flavor profile, making it a versatile dish to adapt to your preferences.
