- In a large pan, cut hot peppers.
- Soak the peppers for 3 days in a mixture of equal parts vinegar and water, with some salt, covered.
- On the third day, drain the peppers.
- Add remaining ingredients: celery, cauliflower, onions, black olives, green olives, garlic, parsley, oregano, and carrots to the pan.
- Mix everything in the pan thoroughly.
- Fill clean jars with the mixture.
- Add oil to the jars to cover the contents.
- Refrigerate the jars before serving.
