  1. In a large pan, cut hot peppers.
  2. Soak the peppers for 3 days in a mixture of equal parts vinegar and water, with some salt, covered.
  3. On the third day, drain the peppers.
  4. Add remaining ingredients: celery, cauliflower, onions, black olives, green olives, garlic, parsley, oregano, and carrots to the pan.
  5. Mix everything in the pan thoroughly.
  6. Fill clean jars with the mixture.
  7. Add oil to the jars to cover the contents.
  8. Refrigerate the jars before serving.
