Quickie Muffins are soft, airy bread muffins with a slightly sweet flavor, perfect for breakfast or snacks, suitable for busy mornings or casual gatherings.

Ingredients

  • 4 cups self-rising flour
  • 1/4 cup sugar
  • 3/4 cup Wesson oil
  • 1 egg
  • 2 cups warm water
  • 1 package dry yeast

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Grease muffin tins well by pouring Wesson oil into one well of the tin, then use a paper towel to grease the other wells.
  3. Mix dry yeast into warm water in a large bowl and let it activate.
  4. Add beaten egg, self-rising flour, sugar, and Wesson oil to the yeast mixture.
  5. Mix by hand with a wooden spoon until combined. The dough will be very soft and gooey.
  6. Fill muffin tins about 3/4 full with the batter.
  7. Bake at 450°F (232°C) for 10 to 12 minutes or until the tops are light brown.
  8. Excess dough can be stored covered in the refrigerator for up to 4 weeks.
