Ingredients

  • 3 cups sliced squash
  • 4 cups ramps
  • 2 cups sliced cukes
  • 1/2 cup diced green peppers
  • 1/2 cup diced red peppers
  • 1/2 cup cauliflower
  • 1 cup white vinegar
  • 1 3/4 cups sugar

Instructions

  1. Combine squash, ramps, cukes, peppers, and cauliflower in a large bowl.
  2. Sprinkle with 1/2 cup salt and let stand in ice water for 2 hours.
  3. Drain the vegetables and rinse to remove excess salt.
  4. In a saucepan, combine vinegar and sugar; bring to a boil.
  5. Add drained vegetables to the vinegar mixture and simmer for 10-15 minutes.
  6. Transfer the mixture into sterilized jars and seal.
  7. Let the pickles cool to room temperature before refrigerating.
