Instructions
- Combine squash, ramps, cukes, peppers, and cauliflower in a large bowl.
- Sprinkle with 1/2 cup salt and let stand in ice water for 2 hours.
- Drain the vegetables and rinse to remove excess salt.
- In a saucepan, combine vinegar and sugar; bring to a boil.
- Add drained vegetables to the vinegar mixture and simmer for 10-15 minutes.
- Transfer the mixture into sterilized jars and seal.
- Let the pickles cool to room temperature before refrigerating.
