Raspberry-Nut Pinwheels

Ingredients

  • 2 c. unsifted all-purpose flour
  • 1 tsp. baking powder
  • 1/2 c. (1 stick) butter or margarine, softened
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 c. seedless raspberry jam
  • 1 c. finely chopped walnuts

Instructions

  1. Sift together flour and baking powder onto waxed paper. Beat together
  2. butter, sugar and egg in large bowl with electric
  3. mixer until
  4. fluffy.
  5. Stir
  6. in
  7. vanilla.
  8. Gradually add flour
  9. mixture, stirring until well combined.
  10. Roll out dough between 2 pieces of waxed
  11. paper
  12. to 12 x 10-inch rectangle. Remove top
  13. piece
  14. of waxed
  15. paper.
  16. Spread
  17. jam
  18. evenly over entire surface
  19. of dough.
  20. Sprinkle evenly with nuts. Firmly roll up dough
  21. from
  22. a long side, jelly-roll style, removing waxed paper as you roll. Wrap roll in waxed paper and refrigerate several hours or overnight.
