Red Cabbage-Apple Compote

Ingredients

  • 1 teaspoon vegetable oil
  • 5 cups thinly sliced red cabbage
  • 2 1/2 cups diced peeled Granny Smith apple (about 3/4 pound)
  • 1 cup diced onion
  • 3/4 cup apple juice
  • 1/2 cup maple syrup
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the cabbage, apple, and onion; saute 3 minutes. Stir in apple juice and remaining ingredients. Cover, reduce heat to medium, and cook 35 minutes, stirring occasionally.
