Ingredients

  • 24 sweet red peppers (about 8 cups)
  • 7 medium onions
  • 3 cups sugar
  • 3 cups vinegar
  • 2 tablespoons salt

Instructions

  1. Cut peppers and onions in half lengthwise and slice thinly.
  2. Alternatively, grind peppers and onions, reserving the juices.
  3. In a saucepan, combine the juices, peppers, onions, sugar, vinegar, and salt.
  4. Simmer the mixture for 30 minutes.
  5. Pour the hot relish into clean, hot jars.
  6. Seal the jars.
