Ingredients

  • 1/2 cup onion, finely chopped
  • 1/2 cup orange juice, strained
  • 2 teaspoons orange rind, finely grated
  • 1 teaspoon salt
  • 4 (8 to 10 oz.) red snapper fillets
  • a pinch of ground nutmeg
  • a pinch of ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine finely chopped onion, strained orange juice, grated orange rind, and salt to create the marinade.
  3. Marinate the red snapper fillets in the mixture for about 30 minutes.
  4. Drain the fillets and place them flesh side up on a baking dish.
  5. Sprinkle each fillet lightly with ground nutmeg and black pepper just before baking.
  6. Bake the fillets for about 12 minutes or until cooked through.
  7. Serve immediately.
