Ingredients

  • 1 Tbsp. fresh rosemary
  • 6 lamb chops or steaks
  • 2 Tbsp. olive oil
  • salt and pepper to taste
  • 1/2 Tbsp. fresh sage, crushed
  • 2 cloves garlic
  • 1 Tbsp. lemon juice
  • 1 large egg
  • 1 can (15 oz.) salmon, drained and flaked
  • 1 cup fresh bread crumbs
  • 1/4 cup minced onion
  • 2 Tbsp. lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. Spray a cookie sheet with vegetable cooking spray.
  3. Beat the egg with a fork in a medium-sized bowl.
  4. Add remaining ingredients (salmon, bread crumbs, onion, lemon juice, sage, garlic, olive oil, salt, and pepper) and mix until well blended.
  5. Shape the mixture into eight 1/2-inch patties.
  6. Place the patties on the prepared cookie sheet.
  7. Bake for 10 to 12 minutes, turning once, until golden brown on both sides.
