Red Snapper With Tomatoes

Ingredients

  • 2 whole Red Snappers
  • 1/2 tablespoons Salt
  • 1/2 cup Vegetable Oil
  • 3 big red Tomatoes, chopped
  • 1 big yellow Onion, chopped
  • 1/2 head Garlic, crushed
  • 3 tablespoons Fish Sauce (found in Asian Food Market)
  • 1 bunch Scallions, finely cut
  • Dash Ground Black Pepper
  • 1 teaspoon Boullion Seasoning, chicken flavored

Instructions

  1. 1. Sprinkle and rub salt all over the fish.
  2. 2. Heat the oil in medium flame, in a large frying pan until hot but not smoking and fry the fish on each side for about 10 minutes until brown, crispy and cooked. Set aside in a serving platter.
  3. 3. Saute the garlic, onions, tomatoes and fish sauce until the tomatoes and onions are very soft and becomes saucy.
  4. 4. Add the pepper, boullion and scallions. Stir for 1 minute and pour the mixture on top of the fish and serve immediately.
