Ingredients

  • 1 can diced Ro-Tel tomatoes and green chili
  • 1 lb Velveeta cheese
  • 7 boiled red potatoes with skin
  • 1 onion
  • 1 bell pepper

Instructions

  1. Saute chopped onion and bell pepper until tender.
  2. Add Velveeta cheese and cook until melted and smooth.
  3. Stir in diced Ro-Tel tomatoes and cook until heated through.
