Refrigerator Bread Pudding

Ingredients

  • 1 c. cold water
  • 2 tsp. sugar
  • 1 slice white bread
  • 1/3 c. nonfat dry milk powder
  • pinch of salt
  • 1 Tbsp. unflavored gelatin
  • 1 tsp. vanilla
  • 3/4 c. buttermilk
  • 1/4 tsp. cinnamon

Instructions

  1. Combine water, sugar, bread, milk, salt, gelatin and vanilla in blender.
  2. Pour mixture into saucepan and simmer slowly until smooth.
  3. Cool.
  4. Return mixture to blender.
  5. Add buttermilk and cinnamon; blend until smooth.
  6. Refrigerate until firm.
  7. Serves 1.
