Ingredients

  • 12 lb. beans (half pinto, half northern)
  • 8-10 lb. smoked shoulder or smoked hocks
  • 3 lb. onions, chopped
  • 12-15 tomatoes, skinned and chopped
  • 2-3 hot peppers, chopped

Instructions

  1. Clean and soak beans for approximately 2 hours.
  2. Cut smoked shoulder or hocks into bite-sized pieces.
  3. Mix all ingredients in a 13-gallon iron pot, seasoning with salt, pepper, and additional spices to taste.
  4. Cook for 2 1/2 to 3 hours until beans are tender.
  5. Serve when ready, ideally after enjoying some drinks and conversation.
