A tangy and sweet preserve combining tart rhubarb, juicy pineapple, and fruity jello, perfect for spreading on toast or serving as a dessert topping. Suitable for summer gatherings.

Ingredients

  • 5 cups rhubarb, chopped fine
  • 1 (No. 2) can crushed pineapple and juice
  • 5 cups sugar
  • 1 (6 oz.) box strawberry jello

Instructions

  1. Combine all ingredients except the jello and cook for 20 to 25 minutes.
  2. Remove from stove and slowly mix in the jello into the hot mixture.
  3. Keep refrigerated. Will keep up to one year unopened, or up to 4 weeks once opened.
