Ingredients

  • 1 box cherry sugar-free jello
  • 1 box lime sugar-free jello
  • 12 oz low-fat cottage cheese
  • 1 envelope unflavored gelatin
  • 20 oz can crushed pineapple no sugar added
  • 1 tsp vanilla
  • 6 to 8 packets Equal

Instructions

  1. Prepare the first box of cherry sugar-free jello and pour it into an 11 1/2 x 7 1/4 x 1 3/4-inch dish.
  2. Refrigerate until the jello is firm.
  3. Beat the low-fat cottage cheese in a blender until smooth and creamy.
  4. Drain the crushed pineapple.
  5. Soften the unflavored gelatin in 1/4 cup of the pineapple juice.
  6. Heat the remaining pineapple juice and mix it into the softened gelatin until dissolved.
  7. Combine the juice-gelatin mixture with the blended cottage cheese.
  8. Add the Equal packets, vanilla, and crushed pineapple to the mixture.
  9. Mix thoroughly and pour over the set cherry jello layer.
  10. Refrigerate until the cottage cheese layer is set.
  11. Prepare the second box of lime sugar-free jello and pour it over the cottage cheese layer.
  12. Refrigerate until completely set before serving.
