- Prepare the first box of cherry sugar-free jello and pour it into an 11 1/2 x 7 1/4 x 1 3/4-inch dish.
- Refrigerate until the jello is firm.
- Beat the low-fat cottage cheese in a blender until smooth and creamy.
- Drain the crushed pineapple.
- Soften the unflavored gelatin in 1/4 cup of the pineapple juice.
- Heat the remaining pineapple juice and mix it into the softened gelatin until dissolved.
- Combine the juice-gelatin mixture with the blended cottage cheese.
- Add the Equal packets, vanilla, and crushed pineapple to the mixture.
- Mix thoroughly and pour over the set cherry jello layer.
- Refrigerate until the cottage cheese layer is set.
- Prepare the second box of lime sugar-free jello and pour it over the cottage cheese layer.
- Refrigerate until completely set before serving.
