Ingredients

  • 1/3 cup uncooked rice
  • 3 tablespoons cornstarch
  • 1 tablespoon vanilla
  • 1/2 cup sugar
  • 4 cups milk
  • 4 eggs

Instructions

  1. Cook rice until tender in salted water.
  2. Scald 3 cups of milk and add drained rice.
  3. Mix cornstarch and sugar together.
  4. Blend the cornstarch and sugar mixture with 1 cup cold milk.
  5. Add the mixture to the hot milk with rice, stirring until thickened.
  6. Cook over low heat in a double boiler for 10 minutes or more, stirring often.
  7. Add slightly beaten egg yolks and cook for 2 or 3 minutes until eggs are set. Add vanilla.
  8. Pour the custard into a baking dish.
  9. Make a meringue from egg whites, adding 8 tablespoons sugar, while beating.
  10. Fold half of the meringue into the custard.
  11. Spread the remaining meringue on top.
  12. Bake until browned at 325°F.
