Rice Pudding (Diabetic)

Ingredients

  • 1 c. Minute rice
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/4 c. raisins (optional)
  • 2 1/2 c. milk
  • 2 eggs, slightly beaten
  • 4 pkg. Equal
  • nutmeg

Instructions

  1. Combine milk, rice, cinnamon and raisins in saucepan.
  2. Bring to rolling boil, stirring constantly.
  3. Reduce heat; boil slowly for 15 minutes, stirring occasionally.
  4. Slowly pour hot mixture into eggs.
  5. Beat well.
  6. Add vanilla and Equal.
  7. Sprinkle with nutmeg.
