Ingredients

  • 2/3 cup sugar
  • 2 envelopes unflavored gelatin
  • 2 cups milk
  • 2 teaspoons vanilla
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 1/2 cups cooked rice
  • 1 cup whipping cream

Instructions

  1. Heat sugar, water, gelatin, and salt in a 2-quart saucepan, stirring constantly, until gelatin is dissolved, about 1 minute.
  2. Stir in milk, cooked rice, and vanilla.
  3. Place the saucepan in a bowl of iced water, stirring occasionally, until mixture mounds slightly when dropped from a spoon, about 10 minutes.
  4. Beat whipping cream in a chilled bowl until stiff.
  5. Fold whipped cream into the rice mixture.
  6. Pour the mixture into an ungreased 6-cup mold or serving bowl.
  7. Cover and refrigerate until firm, about 3 hours.
  8. Unmold by dipping briefly in warm water and loosening the edge with a spatula; invert on a serving plate.
  9. Serve with raspberry sauce.
