Ingredients

  • 3 cups 2% low fat milk
  • 1 large stick cinnamon
  • 1 cup uncooked long grain white rice
  • 2 cups water
  • 1/2 tsp salt
  • Peel of orange or lemon
  • 3/4 cup sugar

Instructions

  1. In a small saucepan, heat 2% low fat milk and cinnamon over medium heat until the milk is infused with cinnamon, about 15 minutes.
  2. Combine uncooked long grain white rice, water, and salt in a 2-3 quart saucepan.
  3. Bring the rice mixture to a boil, stirring once or twice.
  4. Place orange or lemon peel on top of the rice.
  5. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  6. Remove and discard the citrus peel.
  7. Strain the infused milk and stir it into the cooked rice.
  8. Add sugar and simmer for 20 minutes, stirring often until the mixture thickens.
  9. Add raisins and rum.
  10. Simmer for an additional 10 minutes.
  11. Serve the rice pudding cold or hot.
