Rice Ring Chantilly

Ingredients

  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1 envelope unflavored gelatin
  • 2 c. milk
  • 2 eggs, beaten
  • 1 c. cold cooked rice
  • 2 1/2 tsp. vanilla
  • 1/2 c. whipping cream, whipped

Instructions

  1. Combine sugar, salt and gelatin in heavy saucepan.
  2. Stir in milk and eggs; mix thoroughly.
  3. Cook over low heat, stirring constantly, until mixture coats spoon.
  4. Cool.
  5. Fold in rice and vanilla.
  6. Cool until mixture begins to thicken; fold in whipped cream.
  7. Spoon into lightly oiled 1-quart mold.
  8. Chill until firm. Unmold.
  9. Serve with sliced sweetened strawberries.
