Rich Apple Cake Macrobiotic

Ingredients

  • 100 Whole wheat flour (super fine)
  • 60 grams Almond flour
  • 40 grams Cornstarch
  • 1 tsp Baking powder
  • 200 grams Apple
  • 2 tbsp Maple syrup
  • 2 tbsp Natural vegetable oil
  • 1 Your choice of dried nuts or fruits

Instructions

  1. Combine the dry ingredients in a bowl, and mix evenly.
  2. Rinse the apples well, cut into approximate sizes with the skin intact, and finely mince in a food processor while incorporating any bits that stick to the sides.
  3. Add the apples from Step 2 to the dry ingredients from Step 1 along with the maple syrup and oil, and mix with a cutting motion.
  4. Add in dried fruit to taste.
  5. Roughly spread out the dough in the pan, and lightly even it out so as to not let too much air out.
  6. Bake in an oven preheated to 170C for 50 minutes, remove it from the pan, and let cool.
  7. I added roughly chopped cranberries this time.
  8. It's delicious freshly baked.
  9. It will harden when it cools, so warm it up before serving.
