Ingredients

  • 1 cup scalded milk
  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 cakes yeast
  • 1/4 cup lukewarm water
  • 5 cups all-purpose flour
  • 2 beaten eggs

Instructions

  1. Combine scalded milk, shortening, sugar, and salt in a bowl.
  2. Cool the mixture to lukewarm temperature.
  3. Soften the yeast in lukewarm water; stir and add to the cooled milk mixture.
  4. Add about half of the sifted flour and beaten eggs; beat well.
  5. Add enough of the remaining flour to make a soft dough and mix thoroughly.
  6. Turn out the dough onto a lightly floured board and knead about 10 minutes until smooth and satiny.
  7. Place the dough in a warm, greased bowl; brush the surface lightly with melted shortening or butter.
  8. Cover and let rise in a warm place at 80° to 85° for about 2 hours or until doubled in size.
  9. Turn out the risen dough onto a floured board and shape into rolls.
  10. Place the rolls on a greased baking sheet.
  11. Cover and let rise for 30 to 45 minutes or until doubled in size.
  12. Brush the risen rolls with melted butter and bake in a moderate oven at 375° for 15 to 20 minutes.
