Ingredients

  • 3 c. flour
  • 1 1/2 tsp. soda
  • 1 tsp. baking powder
  • 1/8 tsp. nutmeg
  • 1/8 tsp. cloves
  • 3/4 c. butter
  • 1 c. brown sugar
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 c. chopped walnuts
  • 2 c. peeled and grated zucchini
  • 1/2 c. butterscotch chips

Instructions

  1. Sift together the flour, baking soda, baking powder, nutmeg, and cloves.
  2. Cream together the butter, brown sugar, and sugar.
  3. Add vanilla and eggs to the creamed mixture and beat well.
  4. Stir in the grated zucchini, chopped walnuts, and butterscotch chips.
  5. Pour the batter into a greased 10 x 15-inch pan.
  6. Bake at 375°F (190°C) for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
