- Cook pasta 2 min less, than expected.
- Froth butter, and add the herbs.
- Add pasta and reserve cooking water.
- Add Parmasean, fontina and mascarpone.
- Return to medium heat and melt cheese.
- Season and place in baking dish.
- Grate nutmeg, parmasean and mozzarella atop.
- Bake for 10 min and finish in broiler.
