Riviera Rice Pudding

Ingredients

  • 1/2 c. regular rice
  • 1/8 tsp. salt
  • 1 c. water
  • 1 qt. milk
  • 1/4 c. butter
  • 3 eggs
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/4 c. raisins
  • 3 Tbsp. sugar

Instructions

  1. Pour rice into large pot of boiling salted water.
  2. Do not stir.
  3. Cover and cook exactly 7 minutes.
  4. Add milk and butter. Stir a little.
  5. Bring just to boil, lower heat, cover and cook slowly for 1 hour on low heat.
  6. Beat together eggs, sugar, vanilla and raisins.
  7. Pour into rice mixture, stirring slowly, until rice starts to thicken.
  8. Serve hot or cold with a mixture of sugar and cinnamon sprinkled on top.
  9. Topping gives it a browned look.
