- Scald milk, then pour into a large bowl and stir in sugar, lard or butter, salt, and instant mashed potatoes. Cool to lukewarm.
- Sprinkle yeast on warm water (110° to 115°F) and stir to dissolve.
- Add yeast mixture and 4 cups of flour to the milk mixture. Beat for 2 minutes with an electric mixer at medium speed or until butter is smooth, or beat by hand.
- Gradually mix in remaining flour, a little at a time, until a dough that leaves the sides of the bowl forms.
- Turn dough onto a lightly floured board, cover, and let rest for 10 to 15 minutes.
- Knead until smooth, about 10 minutes.
- Place dough in a greased bowl, turn to grease the top, cover, and let rise in a warm place until doubled in size, about 1 1/2 to 2 hours.
- Punch down the dough, cover, and let rise again until doubled, about 45 minutes.
- Turn onto a board, divide into 3 equal parts, shape into balls, cover, and let rest for 10 minutes.
