Ingredients

  • 3 1/2 cups milk
  • 6 tablespoons sugar
  • 6 tablespoons lard or butter
  • 2 teaspoons salt
  • 1/4 cup instant mashed potatoes
  • 2 packages active dry yeast
  • 1/2 cup warm water (110° to 115°F)
  • 10 to 11 cups sifted all-purpose flour
  • 3 tablespoons cornmeal

Instructions

  1. Scald milk, then pour into a large bowl and stir in sugar, lard or butter, salt, and instant mashed potatoes. Cool to lukewarm.
  2. Sprinkle yeast on warm water (110° to 115°F) and stir to dissolve.
  3. Add yeast mixture and 4 cups of flour to the milk mixture. Beat for 2 minutes with an electric mixer at medium speed or until butter is smooth, or beat by hand.
  4. Gradually mix in remaining flour, a little at a time, until a dough that leaves the sides of the bowl forms.
  5. Turn dough onto a lightly floured board, cover, and let rest for 10 to 15 minutes.
  6. Knead until smooth, about 10 minutes.
  7. Place dough in a greased bowl, turn to grease the top, cover, and let rise in a warm place until doubled in size, about 1 1/2 to 2 hours.
  8. Punch down the dough, cover, and let rise again until doubled, about 45 minutes.
  9. Turn onto a board, divide into 3 equal parts, shape into balls, cover, and let rest for 10 minutes.
