Ingredients

  • 1 eye of round roast (3-5 lb.)
  • salt and pepper
  • 1 qt. water

Instructions

  1. Salt and pepper the roast on top and bottom.
  2. Place in a roasting pan and cover with foil.
  3. Put the roast in a 375 degree oven and cook for 1 hour.
  4. Turn down the oven temperature to 200 degrees and continue cooking for 3-4 hours.
  5. Remove from oven.
  6. If the roast isn't browned, remove foil and return to oven to brown.
  7. When the roast is done, place on a platter.
  8. For gravy, place the pan with drippings on the stovetop and heat on medium-high heat to brown.
  9. In a jar, shake water and flour until well blended.
  10. Pour the water and flour mixture into the browned drippings and heat, stirring until thickened.
  11. Adjust salt and pepper to taste in the gravy.
  12. Serve the roast with hot biscuits and gravy.
