Ingredients

  • 1 young beaver
  • 2 medium onions
  • 2 green peppers
  • 2 cans beer

Instructions

  1. Remove excess fat from the beaver; rub with salt and pepper to taste.
  2. Place the beaver in a small roaster or roasting bag with chunks of onion and green pepper.
  3. Add two cans of beer to the roasting setup.
  4. Roast at 350°F (175°C) for 2 hours or until the beaver is done, depending on its size.
  5. Remove the beaver from the bone and serve.
