Ingredients

  • 1 cup fresh mushrooms, minced
  • 8 slices cold roast beef, sliced very thin
  • 1/4 cup no-fat Thousand Island dressing

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté minced mushrooms and onion in margarine until lightly browned.
  3. Spread each slice of roast beef with the mushroom and onion filling.
  4. Roll each slice of beef and place seam side down in an 8 x 12-inch baking dish sprayed with butter-flavored cooking spray.
  5. Spoon the no-fat Thousand Island dressing evenly over the beef rolls.
  6. Bake for 10 minutes or until the rolls are heated through.
  7. Serve immediately.
