Ingredients

  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 3 Tbsp. oil
  • 1 lb. ground venison
  • 1 tsp. salt and pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 8 oz. can tomatoes
  • 1 1/2 c. beef broth
  • 3/4 c. uncooked rice
  • 1/3 c. grated Parmesan cheese

Instructions

  1. Saute chopped onion and green pepper in oil until soft.
  2. Add ground venison and saute until it loses its color.
  3. Stir in tomatoes, beef broth, rice, salt, pepper, thyme, and oregano.
  4. Bring to a boil and then reduce heat to simmer, covered, for 20 to 25 minutes.
  5. Sprinkle grated Parmesan cheese over the top when ready to serve.
