- Dress and clean the squirrels.
- Wash the squirrels in several waters.
- Cover the squirrels with cooking oil mixed with lemon juice; let stand for 1 hour.
- Combine bread crumbs with enough milk to moisten the sliced mushrooms, salt, pepper, and onion juice to make a stuffing mixture.
- Stuff the squirrels with the mixture; sew and truss them.
- Place the stuffed squirrels in a roaster; baste with olive oil, bacon fat, or other fat.
- Roast uncovered at 325°F until tender, about 1 1/2 to 1 3/4 hours.
- Baste every 15 minutes with fat during roasting.
