Ingredients

  • 3 small squirrels
  • 3/4 cup cooking oil
  • 1/4 cup lemon juice
  • 2 cups bread crumbs
  • 1/2 cup milk or cream
  • 1/8 teaspoon pepper
  • 1 cup sliced mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion juice
  • 4 tablespoons olive oil, bacon fat, or other fat

Instructions

  1. Dress and clean the squirrels.
  2. Wash the squirrels in several waters.
  3. Cover the squirrels with cooking oil mixed with lemon juice; let stand for 1 hour.
  4. Combine bread crumbs with enough milk to moisten the sliced mushrooms, salt, pepper, and onion juice to make a stuffing mixture.
  5. Stuff the squirrels with the mixture; sew and truss them.
  6. Place the stuffed squirrels in a roaster; baste with olive oil, bacon fat, or other fat.
  7. Roast uncovered at 325°F until tender, about 1 1/2 to 1 3/4 hours.
  8. Baste every 15 minutes with fat during roasting.
