Ingredients

  • 8 whole heads fresh garlic
  • 1/3 cup olive oil
  • 1 1/2 teaspoon freshly ground pepper
  • 1 1/2 teaspoon dried thyme
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Trim off the tops of each garlic head to expose the cloves.
  3. Place garlic heads in a shallow baking dish, such as a 9-inch pie plate.
  4. Drizzle the garlic with olive oil and sprinkle with ground pepper, salt, and dried thyme.
  5. Roast garlic for 30 minutes at 350°F.
  6. Reduce oven temperature to 250°F (120°C) and continue roasting for 1 hour.
  7. Remove from oven and let cool slightly.
  8. Pop the cloves out of the skins and spread on bread or use as desired.
