Ingredients

  • 2 medium Zucchini, julienned
  • 2 medium Yellow Squash, julienned
  • 2 Red Onions, quartered
  • 2 cups Carrots, julienned
  • 3 tbsp chopped garlic
  • 2 tbsp dried basil
  • 2 tsp oregano
  • 2 tsp dried parsley
  • 1+ cup olive oil
  • 1 box bow tie pasta

Instructions

  1. Preheat the oven to 400°F (200°C). Toss all vegetables with olive oil and herbs until evenly coated.
  2. Spread the vegetables onto two cookie sheets.
  3. Roast in the oven for 15-20 minutes, stirring at least once, until vegetables are well done and crispy.
  4. Cook the bow tie pasta according to package instructions.
  5. Drain the pasta and combine with the roasted vegetables.
  6. Serve hot, garnished with additional herbs if desired.
