  • 1 teaspoon rosemary leaves
  • Italian spice

  3. Pour oil and melted margarine into the bottom of a roasting pan.
  4. Place the chicken on top of the oil and margarine mixture.
  5. Sprinkle the chicken with garlic, crushed rosemary, and Italian spice.

Tips & Substitutions

For enhanced flavor, marinate the chicken in the oil, melted margarine, and spices for a few hours or overnight. If you don't have white wine, you can substitute with chicken broth or apple cider vinegar mixed with water for a similar acidity. Fresh garlic is preferred, but garlic powder can work in a pinch. Adjust the Italian spice to suit your taste.

Serving Suggestions

Serve the roasted Italian chicken with a side of roasted vegetables or a fresh salad for a complete meal. It pairs beautifully with Pasta With Chicken And Vegetables In Garlic Sauce for a hearty dinner. Consider adding a sprinkle of fresh parsley or grated Parmesan on top for added flavor and presentation.

Storage & Reheating

Store any leftover roasted chicken in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 15-20 minutes, covered with foil to prevent drying out. You can also reheat it in the microwave, but the oven method will keep it crispier.

Frequently Asked Questions

Can I use bone-in chicken parts instead of a whole chicken?

Absolutely! Bone-in chicken pieces like thighs or drumsticks will work perfectly and may cook faster. Just adjust the cooking time based on the size of the pieces, ensuring they reach an internal temperature of 165°F (75°C).

What type of white wine is best for this recipe?

A dry white wine such as Sauvignon Blanc or Pinot Grigio is ideal for this recipe. Avoid sweet wines, as they can alter the dish's flavor. If you prefer not to use wine, opt for chicken broth or a mixture of vinegar and water.

Can I make this dish in advance?

Yes, you can prepare the chicken and marinate it the day before. Just cover it and refrigerate until you're ready to cook. When it's time to bake, allow it to come to room temperature before placing it in the oven for a more even cook.
