Ingredients

  • light vegetable oil cooking spray
  • 4 Tbsp. Dijon-style mustard
  • 2 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/8 tsp. cayenne pepper
  • 16 baby red potatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spray a roasting pan three times with light vegetable oil cooking spray to coat.
  3. Put the Dijon-style mustard, paprika, ground cumin, chili powder, and cayenne pepper in a large bowl.
  4. Whisk to blend.
  5. Prick the baby red potatoes several times with the tines of a fork and add them to the bowl.
  6. Toss to coat the potatoes evenly with the mustard mixture.
  7. Pour the coated potatoes into the prepared roasting pan, leaving a little space between them.
  8. Bake for 45 minutes to 1 hour, until the potatoes are fork tender.
