Ingredients

  • 1 pt. oysters
  • 2 bunches green onions
  • 2 pkg. frozen chopped spinach
  • 1 lb. butter, melted
  • 1/4 c. Worcestershire sauce
  • salt, pepper and Tabasco
  • 2 tsp. lemon juice
  • 1 c. Italian breadcrumbs

Instructions

  1. Drain oysters, reserving liquor.
  2. Grind all greens in the blender, using 1/2 cup oyster liquor and melted butter for liquid. Place in an enameled or stainless steel pan; add Worcestershire, lemon juice and seasonings.
  3. Bring to simmer.
  4. Blend or cut oysters into small pieces.
  5. Add to spinach mixture along with breadcrumbs and continue to simmer about 1 hour or until raw taste is gone.
  6. Check for seasonings.
  7. May be frozen.
  8. Yield:
  9. 1 1/2 quarts.
