Romano Bean Tacos

Ingredients

  • 1 can Romano beans
  • 1 tsp salt
  • 1/2 t turmeric
  • 2 T olive oil
  • 1-2 cloves of garlic, crushed
  • 1/2 package of taco seasoning
  • 3-5 T water
  • 1 t cumin
  • 1/2 t hot pepper
  • salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup grated cheese
  • 1 sliced tomato

Instructions

  1. Rinse the can of romano beans in cold water. Add to a pot with salt and tumeric and cover in water. Boil for 15-30 minutes until the beans are soft. Drain.
  2. Heat oil and garlic in a frying pan at medium heat. Add beans, along with the seasonings and water (add more water if needed). Heat until the water has been absorbed.
  3. Spread 1/6 of the bean mixture on the tortilla and serve with the toppings. Add what you like and roll it up at the table.
  4. Other suggested toppings: stir-fried greens
  5. hot peppers
  6. sour cream/plain yoghurt
