Ingredients

  • 4 orange roughy filets
  • 1 egg white
  • 1/4 cup low-fat plain yogurt
  • 1/4 cup toasted sliced almonds
  • 1 to 2 teaspoons grated orange rind

Instructions

  1. Poach the orange roughy filets in simmering water for 4 minutes.
  2. Drain the filets and dry thoroughly on paper towels.
  3. Whip the egg white until stiff peaks form.
  4. Fold in the yogurt, toasted sliced almonds, and grated orange rind into the egg white.
  5. Coat the drained filets with the egg white mixture.
  6. Broil until the filets are brown and puffy, about 2 to 3 minutes.
