Ingredients

  • 1 1/2 to 2 heads red leaf and/or chicory
  • 2 medium cucumbers
  • 1 large green pepper
  • 3 medium tomatoes
  • 1 bunch green onions
  • 1 bunch red radishes
  • 1/2 cup celery hearts
  • 1/2 cup mushrooms
  • 3 small carrots
  • 1 bunch parsley
  • 1/2 cup oil cured olives
  • 1/2 pound Feta cheese
  • salt

Instructions

  1. Wash and dry chicory and/or red leaf lettuce.
  2. Slice cucumbers, sliver green peppers, chop green onions, chop celery hearts, halve mushrooms, and tear parsley into pieces.
  3. Mix all prepared vegetables and chill in the refrigerator.
  4. Just before serving, add salt to taste and a pinch of sugar.
  5. Dress the salad with oil and vinegar sauce and mix thoroughly.
  6. Garnish with oil cured olives, crumbled Feta cheese, and sliced radishes before serving.
