Ingredients

  • 1 cup sugar
  • 3/4 cup rum
  • 2 cups whole unsalted cashews
  • 1/4 cup butter

Instructions

  1. Combine sugar and rum in a medium-sized saucepan.
  2. Bring to a boil; cook for 3 minutes or until 234°F on a candy thermometer.
  3. Remove from heat. Immediately add cashews and stir to coat.
  4. Return to medium heat and stir constantly to re-melt the sugar.
  5. When sugar is golden brown, remove from heat and stir in butter.
  6. Spread on a well-oiled cookie sheet to dry.
  7. Break apart with a fork.
