Russian Hot Pot

A hearty Russian hot pot with tender potatoes, cabbage, tomatoes, and ground beef, perfect for warming up and satisfying the whole family on a chilly day.

Ingredients

  • 1 1/2 lb. ground beef
  • 1 (16 oz.) can whole tomatoes
  • 1 medium onion
  • 1 lb. green cabbage
  • 1 lb. thin skinned potatoes
  • 2 c. water
  • 2 beef bouillon cubes

Instructions

  1. Put water and bouillon cubes in a 4-quart Dutch oven and bring to a boil over medium heat.
  2. Meanwhile, scrub the potatoes.
  3. Cut the potatoes into 1/2-inch chunks and add to the pot. Increase heat to high.
  4. Remove the core from the cabbage, then cut it into 1/2-inch chunks.
  5. Peel and quarter the onion.
  6. Add the cabbage and onion to the pot.
  7. Add the tomatoes, breaking them up with your fingers.
  8. Add the ground beef, crumbling it as you add it to the pot.
  9. Let the contents boil for about 30 seconds, then stir to mix well.
  10. Reduce heat to low, cover, and simmer for 30 minutes or until the potatoes are tender.
  11. Serve in soup plates.
