Ingredients

  • 6 medium onions
  • 3 carrots
  • 3 sticks celery
  • 4 potatoes
  • 1 can tomato sauce
  • 2 cans beef consomme
  • Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Tabasco sauce

Instructions

  1. Grate all of the vegetables coarsely, but not too coarse.
  2. Place all of the ingredients with 1 quart of water in a pan and bring to a gentle boil.
  3. Simmer lightly for 30 minutes, stirring occasionally.
  4. Add Worcestershire sauce and Tabasco sauce later in the process to enhance flavor without overpowering.
  5. Taste the soup during cooking and add more water or seasonings as desired for desired consistency and flavor.
