Ingredients

  • 1 pkg. dry yeast
  • 3 cups lukewarm milk
  • 3 cups flour (buckwheat if possible)
  • 3 eggs
  • 1/2 cup butter
  • 1/2 teaspoon salt

Instructions

  1. Dissolve yeast in 1/4 cup warm milk and let rise in a warm place for about 3 hours to make a sponge.
  2. Cream together the egg yolks, butter, and salt.
  3. Add the yeast sponge, remaining flour, and remaining milk to the yolk mixture. Beat until smooth.
  4. Cover the batter and let it stand for 30 minutes.
  5. Beat egg whites until stiff and fold into the batter gently.
  6. Lightly butter a skillet and heat it.
  7. Pour batter to form pancakes about 3 inches in diameter and cook until golden brown on each side.
