Sage Mashed Potatoes

Ingredients

  • 4 medium potatoes, peeled and cut into 1/8 inch slices
  • 1 medium onion, chopped
  • 1/4 cup water
  • 2 tablespoons olive oil or 2 tablespoons canola oil
  • 1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup low-fat plain yogurt

Instructions

  1. Spray a 11 x 7 x 2 inch baking dish with PAM.
  2. Layer the potatoes and onion.
  3. Combine the water, oil, sage, salt and pepper.
  4. Pour over potatoe mixture.
  5. Cover and bake at 450 degrees for 45 to 50 minutes or until potatoes are tender, stirring twice.
  6. Transfer to a mixing bowl, add yogurt and mash.
